Batatada (Mecanese potato dessert) - Macau
INGREDIENTS
- 3 1/3 cups potatoes, boiled, peeled and mashed
- 1/2 cup coconut milk
- 1/2 cup evaporated milk
- 2 cups butter
- 2 whole eggs
- 6 egg yolks
- 2 cups sugar
- 1 cup flour
- 1 teaspoon baking powder
DIRECTIONS
- Preheat oven to 400ºF.
- Beat together potatoes, coconut milk and evaporated milk. Add butter, whole eggs and egg yolks, and sugar; mix well. Stir in flour and baking powder. Pour into a casserole. Bake for about 1 hour. When knife is inserted in the center and comes out clean, the batada is cooked.
