Batatada (Mecanese potato dessert) - Macau
  • 3 1/3 cups potatoes, boiled, peeled and mashed
  • 1/2 cup coconut milk
  • 1/2 cup evaporated milk
  • 2 cups butter
  • 2 whole eggs
  • 6 egg yolks
  • 2 cups sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  1. Preheat oven to 400ºF.
  2. Beat together potatoes, coconut milk and evaporated milk. Add butter, whole eggs and egg yolks, and sugar; mix well. Stir in flour and baking powder. Pour into a casserole. Bake for about 1 hour. When knife is inserted in the center and comes out clean, the batada is cooked.
So as most of you probably know Macau used to be a Portuguese colony and the Portuguese culinary influence still prevails in Macau.
