Bean Pie from 1922

INGREDIENTS
  • 1 bag of Beans
  • pie crust
  • mix 2 tablespoons of flour,
  • 4 large eggs,
  • 1/2 stick of unsalted melted butter,
  • 2 teaspoons of cinnamon,
  • a cup of sugar,
  • 12-oz. can of evaporated milk,
  • 2 teaspoons of vanilla extract,
  • whipped cream topping.
DIRECTIONS
  1. Soak navy beans overnight. Boil the beans. While the beans are boiling, make regular old pie dough. Place in pie dish. In a separate bowl, mix 2 tablespoons of flour, 4 large eggs, 1/2 stick of unsalted melted butter, 2 teaspoons of cinnamon, a cup of sugar, 12-oz. can of evaporated milk, 2 teaspoons of vanilla extract, & the boiled beans. Blend until mixture is smooth. Strain blended mixture through a sieve into the pie dish. Bake in oven at 350*F for 50-60 minutes. Add whipped cream topping.
