Bean and Bacon Soup

  • 1 lb dried beans
  • 8 cups water
  • 1 lb chopped bacon
  • 1 large chopped onion
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 cups chopped potatoes
  • 1 cup chopped celery
  • 2 large chopped tomatoes
DIRECTIONS
  1. Bring beans to a boil in 4 cups of water and boil for 45 minutes
  2. Add remaining 4 cups of water and bring back to a boil
  3. Saute bacon and onion in a skillet until lightly browned
  4. Stir in the beans and simmer for 1 hour
