Beans & Mushrooms Amandine

  • Servings: 6 servings
  • 1 Tb. finely chopped chives or green onions
  • 2 Tb. butter
  • 2 tsp. flour
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 c. light cream, half-and-half or undiluted evaporated milk
  • 1 (1 lb.) can green beans
  • 1 (3-4 oz.) can mushrooms, drained
  • 2 Tb. toasted slivered almonds
DIRECTIONS
  1. Cook chives in butter a few min. Add flour, salt and pepper, stirring 'til smooth. Add cream and 1/4 c. liquid from beans. Cook 'til thickened, stirring constantly.
  2. Add drained beans and mushrooms and heat. Serve sprinkled with almonds.
