Beef & Vegetable Stir Fry

INGREDIENTS
- 2 cups Minute brown rice, uncooked
- 1/4 cup soy sauce
- 2 T. Kraft Catalina dressing
- 3/4 t. groun ginger
- 1 lb. beef flank steak, cut into strips
- 2 t. cornstarch
- 1 bag (16 oz.) Oriental style frozen stir-fry vegetables, thawed
- 1/4 cup dry roasted peanuts
DIRECTIONS
- Prepare rice as directed on box.
- Mix soy sauce, dressing, and ginger until well blended.
- Toss steak with cornstarch.
- Spray large non-stick skillet with cooking spray; heat to med-high heat.
- Add steak mixture; cook and stir 3 min. or until steak is cooked.
- Add vegetables and soy sauce mixture; cook and stir 3 min. or until sauce thickens and vegetables are heated through.
- Top with peanuts.
