Beef & Vegetable Stir Fry
INGREDIENTS
  • 2 cups Minute brown rice, uncooked
  • 1/4 cup soy sauce
  • 2 T. Kraft Catalina dressing
  • 3/4 t. groun ginger
  • 1 lb. beef flank steak, cut into strips
  • 2 t. cornstarch
  • 1 bag (16 oz.) Oriental style frozen stir-fry vegetables, thawed
  • 1/4 cup dry roasted peanuts
DIRECTIONS
  1. Prepare rice as directed on box.
  2. Mix soy sauce, dressing, and ginger until well blended.
  3. Toss steak with cornstarch.
  4. Spray large non-stick skillet with cooking spray; heat to med-high heat.
  5. Add steak mixture; cook and stir 3 min. or until steak is cooked.
  6. Add vegetables and soy sauce mixture; cook and stir 3 min. or until sauce thickens and vegetables are heated through.
  7. Top with peanuts.
