Beef Barley Soup

  • 1 tbsp vegetable oil
  • 1 pound beef cut into cubes
  • 8 cups water
  • 2 beef flavor bouillon cubes
  • 1/2 cup hot water
  • 1 medium can tomatoes
  • 1 cup carrots sliced
  • 1 1/2 cup onion chopped
  • 1 cup celery sliced
  • 1/2 cup barley
  • 1/4 cup chopped parsley
  • 1/2 tsp salt
  • 1 1/2 tsp pepper
DIRECTIONS
  1. In a pan heat oil in medium heat.
  2. Cook onions and celery until soft. Remove and set aside.
  3. Add beef. Cook stirring often, until golden brown.
  4. Add the 6 cups of water.
  5. In a cup, dissolve bouillon cube in 1/2 cup water.
  6. Add tomatoes, carrots, barley, parsley, salt and pepper.
  7. Bring to a boil
  8. Reduce heat, cover and simmer for 1 1/2 hours, or until the meat is tender.
