Beef Barley Soup

- 1 tbsp vegetable oil
- 1 pound beef cut into cubes
- 8 cups water
- 2 beef flavor bouillon cubes
- 1/2 cup hot water
- 1 medium can tomatoes
- 1 cup carrots sliced
- 1 1/2 cup onion chopped
- 1 cup celery sliced
- 1/2 cup barley
- 1/4 cup chopped parsley
- 1/2 tsp salt
- 1 1/2 tsp pepper
DIRECTIONS
- In a pan heat oil in medium heat.
- Cook onions and celery until soft. Remove and set aside.
- Add beef. Cook stirring often, until golden brown.
- Add the 6 cups of water.
- In a cup, dissolve bouillon cube in 1/2 cup water.
- Add tomatoes, carrots, barley, parsley, salt and pepper.
- Bring to a boil
- Reduce heat, cover and simmer for 1 1/2 hours, or until the meat is tender.
