Beef Potato in One

INGREDIENTS
  • 1 # hamburger
  • 1/2 small onion, diced
  • 1/4 green pepper, diced
  • 1 can diced tomatoes
  • 1 bay leaf
  • 3/4 cup water
  • 2 large Idaho potatoes, cut in round slices
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp cornstarch
DIRECTIONS
  1. 1. In a skillet brown beef, onions, peppers
  2. 2. Add salt and pepper to taste and drain grease from pan
  3. 3. Add 1/2 cup water, bay leaf, tomatoes
  4. 4. Simmer for 15 minutes
  5. 5. Remove bay leaf and add remaining water with cornstarch for thickening
  6. 6. In another skillet, brown potatoes in a small amount of oil until tender, and then drain
  7. 7. Place potatoes in casserole dish and pour beef mixture over
  8. 8. Add cheese to top and brown in oven at 375 degrees for 10 minutes
  9. Let cool then cut in squares for servings.
