Beef Potato in One

INGREDIENTS
- 1 # hamburger
- 1/2 small onion, diced
- 1/4 green pepper, diced
- 1 can diced tomatoes
- 1 bay leaf
- 3/4 cup water
- 2 large Idaho potatoes, cut in round slices
- 1/2 cup shredded cheddar cheese
- 1 tbsp cornstarch
DIRECTIONS
- 1. In a skillet brown beef, onions, peppers
- 2. Add salt and pepper to taste and drain grease from pan
- 3. Add 1/2 cup water, bay leaf, tomatoes
- 4. Simmer for 15 minutes
- 5. Remove bay leaf and add remaining water with cornstarch for thickening
- 6. In another skillet, brown potatoes in a small amount of oil until tender, and then drain
- 7. Place potatoes in casserole dish and pour beef mixture over
- 8. Add cheese to top and brown in oven at 375 degrees for 10 minutes
- Let cool then cut in squares for servings.
