Beef Stroganoff

INGREDIENTS
  • 1 tbs all purpose flour
  • 1/2 tsp salt
  • 1 lb beef sirloin, cut in 1/4 in strips
  • 2 tbs butter
  • 1 3oz can sliced mushrooms, drained
  • 1/2 cup chopped oinon
  • 2 tbs butter
  • 3 tbs all purpose flour
  • 1 tbs tomato past
  • 1 1/4 cups cold beef stock
  • 1 cup dairy sour cream
DIRECTIONS
  1. Combine the 1 tbl flour and salt; coat meat melt 2 tbl butter in skillet; add meat and bown quickly on both sides. add mushrooms, onion and cook til crisp-tender, 3 or 4 minutes. remove meat an mushrooms form pan. add 2 tbs butter to pan drippings. Blend in the 3 tbs flour, and add tomato paste; stir in beef stock. Cook and stir til thickened and bubbly.
  2. Return browned meat and mushrooms to skillet. Stir in sour cream and cook slowly til hot. Do not boil! Serve over noodles. Serves 4 or 5.
