Beef Stroganoff

INGREDIENTS
- 1 tbs all purpose flour
- 1/2 tsp salt
- 1 lb beef sirloin, cut in 1/4 in strips
- 2 tbs butter
- 1 3oz can sliced mushrooms, drained
- 1/2 cup chopped oinon
- 2 tbs butter
- 3 tbs all purpose flour
- 1 tbs tomato past
- 1 1/4 cups cold beef stock
- 1 cup dairy sour cream
DIRECTIONS
- Combine the 1 tbl flour and salt; coat meat melt 2 tbl butter in skillet; add meat and bown quickly on both sides. add mushrooms, onion and cook til crisp-tender, 3 or 4 minutes. remove meat an mushrooms form pan. add 2 tbs butter to pan drippings. Blend in the 3 tbs flour, and add tomato paste; stir in beef stock. Cook and stir til thickened and bubbly.
- Return browned meat and mushrooms to skillet. Stir in sour cream and cook slowly til hot. Do not boil! Serve over noodles. Serves 4 or 5.
