Beef Stroganoff

INGREDIENTS
- 2 lbs. lean sirloin
- 4 tbsp. butter
- 1/2 lb. mushrooms, washed and sliced
- 1/2 cup tomato juice
- 1 clove garlic, peeled and crushed
- 2 tsp. salt
- 1/8 tsp. pepper
- 1 10 1/2 oz. can cream of mushroom soup
- 1 cup sour cream
DIRECTIONS
- Trim fat from beef and cut meat into strips 3 x 1-1/2 inches. Melt half of butter, add mushrooms and sauté until golden. Remove and add rest of butter. Stir in meat and cook for 4 minutes. Add tomato juice and garlic.
- Cover and simmer for 30 to 40 minutes. Stir seasonings, soup and sour cream into mixture just before serving and heat thoroughly. Serve with rice or noodles.
