Beef Zucchini Casserole

INGREDIENTS
  • 2 Tblsp. butter
  • 1 med. onion, chopped
  • 1/4 c. Parmesan cheese
  • 1-1/2 lbs. ground beef
  • 4 c. sliced zucchini (about 3 med.)
  • 1 Tblsp. flour
  • 1/2 tsp. salt
  • dash pepper
  • 2/3 c. ketchup
  • 1/4 c. shredded cheddar/jack cheese
  • or cheese of your choice
DIRECTIONS
  1. In a large skillet heat butter; add zucchini and onion.
  2. Cook until onion is tender.
  3. Pour into baking dish 10x 6 x 1-1/2 inch.
  4. Sprinkle with parmesan cheese.
  5. Set aside.
  6. In same skillet, brown ground beef; drain grease.
  7. Stir in flour, salt, pepper and then ketchup into the meat.
  8. Spoon meat mixture evenly over zucchini. Cover and bake in a 350 degree oven for 20 minutes.
  9. Remove cover and top with shredded cheese; bake uncovered 5 minutes longer, or until cheese has melted
