Beef Zucchini Casserole

INGREDIENTS
- 2 Tblsp. butter
- 1 med. onion, chopped
- 1/4 c. Parmesan cheese
- 1-1/2 lbs. ground beef
- 4 c. sliced zucchini (about 3 med.)
- 1 Tblsp. flour
- 1/2 tsp. salt
- dash pepper
- 2/3 c. ketchup
- 1/4 c. shredded cheddar/jack cheese
- or cheese of your choice
DIRECTIONS
- In a large skillet heat butter; add zucchini and onion.
- Cook until onion is tender.
- Pour into baking dish 10x 6 x 1-1/2 inch.
- Sprinkle with parmesan cheese.
- Set aside.
- In same skillet, brown ground beef; drain grease.
- Stir in flour, salt, pepper and then ketchup into the meat.
- Spoon meat mixture evenly over zucchini. Cover and bake in a 350 degree oven for 20 minutes.
- Remove cover and top with shredded cheese; bake uncovered 5 minutes longer, or until cheese has melted
