Beef and Barley Soup

INGREDIENTS
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1 cup water
- 1 lb. beef, cut into 3/4" cubes
- 1 small onion, diced
- 1 stalk celery, diced
- 1 14 oz. can diced tomatoes w/ juice
- 5 mushrooms, sliced
- 2 tsp. beef boullion
- 2 bay leaves
- 1/2 tsp. basil
- 1/2 cup pearl barley
DIRECTIONS
- 1. Brown beef cubes in olive oil in a large pan.
- 2. Add onion and garlic, cook on medium to soften onion.
- 3. Add celery, carrots, tomatoes, mushrooms, water, boullion, bay leaves, basil, and salt. Bring to boil, thenn simmer 2 hours.
- 4. Rinse barley and add to pot with water. Simmer another 1-1 1/2 hours.
