Beef and Broccoli
  • 1 lb. top round steak sliced very thin
  • 2 TBS cornstarch
  • 1 can beef broth
  • 1 TBS brown sugar
  • 1 TBS soy sauce
  • 1/4 tsp Garlic powder
  • 1/4 tsp ground ginger
  • 4 cups broccoli flowerets
  • 4 cups cooked rice, or noodles
  1. Slice beef into very thin strips. Mix cornstarch, 1 cup broth, sugar and soy sauce.
  2. Spray skillet with vegetable cooking spray and heat 1 minute. Add beef and stir-fry until browned and juices evaporate. Remove beef.
  3. Add remaining broth, garlic, ginger and broccoli. Heat to a boil. Cover and cook over low heat 5 minutes until broccoli is tender-
  4. crisp.
  5. Add cornstarch mixture. Cook until mixture boils and thickens, stirring. Return beef to skillet and heat through. Serve over rice.
