Beef and Broccoli Skillet Casserole

- Beef and Broccoli Skillet Casserole
- 1 lb eye of round steak or roast cut into 1/2" cubes
- 1 lb bag of frozen broccoli florets, cut into 1" pieces
- 3 cups hot water
- 1 envelope onion soup mix, dry
- 3 cups instant rice
- 3/4 cup fat-free French salad dressing
DIRECTIONS
- Cook beef on high for 3-4 minutes or until bottom cooked.
- Turn beef over and pour broccoli, water and soup mix onver beef. Stir until soup mix is dissolved.
- Cover and cook on high for 6 minutes.
- Add rice and stir until rice covered by liquid.
- turn off heat, cover, and let sit for 5 minutes.
- Sitr in dressing.
- Serve with light soy sauce if desired.
