  • Beef and Broccoli Skillet Casserole
  • 1 lb eye of round steak or roast cut into 1/2" cubes
  • 1 lb bag of frozen broccoli florets, cut into 1" pieces
  • 3 cups hot water
  • 1 envelope onion soup mix, dry
  • 3 cups instant rice
  • 3/4 cup fat-free French salad dressing
  1. Cook beef on high for 3-4 minutes or until bottom cooked.
  2. Turn beef over and pour broccoli, water and soup mix onver beef. Stir until soup mix is dissolved.
  3. Cover and cook on high for 6 minutes.
  4. Add rice and stir until rice covered by liquid.
  5. turn off heat, cover, and let sit for 5 minutes.
  6. Sitr in dressing.
  7. Serve with light soy sauce if desired.
