Beef and cheese stuffed bell peppers
INGREDIENTS

- 4 bell peppers
- 2 beef steaks, diced (about ½ inch)
- 2 cups cheese (cheddar or mozzarella or any variety you like), shredded
- 1 tbsp coconut oil
- 4 tbsp cream cheese
- 2 tbsp dried or fresh basil
- 1 tbsp paprika
- chili flakes (optional)
- salt and pepper to taste
DIRECTIONS
- Preheat oven to 400 degrees Fahrenheit
- Mix cream cheese with basil
- Cut top off of the bell peppers and remove core
- Cook in lightly salted water about 5 minutes, then drain and put aside
- Lightly brown beef in coconut oil, season with salt, pepper and paprika
- Stuff peppers with beef, cheese and cream cheese in layers, finish with a generous layer of cheese
- Place on a baking tray or in an ovenproof dish and bake for around 20 minutes
