Beef and cheese stuffed bell peppers

  • 4 bell peppers
  • 2 beef steaks, diced (about ½ inch)
  • 2 cups cheese (cheddar or mozzarella or any variety you like), shredded
  • 1 tbsp coconut oil
  • 4 tbsp cream cheese
  • 2 tbsp dried or fresh basil
  • 1 tbsp paprika
  • chili flakes (optional)
  • salt and pepper to taste
  1. Preheat oven to 400 degrees Fahrenheit
  2. Mix cream cheese with basil
  3. Cut top off of the bell peppers and remove core
  4. Cook in lightly salted water about 5 minutes, then drain and put aside
  5. Lightly brown beef in coconut oil, season with salt, pepper and paprika
  6. Stuff peppers with beef, cheese and cream cheese in layers, finish with a generous layer of cheese
  7. Place on a baking tray or in an ovenproof dish and bake for around 20 minutes
