Beefy Chili Mac

- 1 lb elbow macaroni
- 1 lb ground beef
- 1/2 c caramelized onion (about 1 large onion)
- 2 T roasted garlic
- 1 large can diced tomatoes
- 1 8oz can tomato sauce
- 1 can whole corn, drained
- 1 T chili powder
- 1 t salt
- 1/4 t pepper
- 2 c finely shredded cheddar cheese
DIRECTIONS
- Cook macaroni according to box, minus a couple of minutes, so it is very al dente - drain
- Brown beef, breaking up and draining off fat
- Add caramelized onion and garlic, mixing well
- Add tomatoes, tomato sauce, chili powder, salt and pepper, cooking for about 30 minutes or until sauce is not watery
- Add corn and pasta and mix thoroughly
- Pour into 9x12 baking dish and bake at 350 degrees for 30 minutes
- Sprinkle cheese on top and bake for another 15 minutes or until cheese is melted
