Beer Cheese Soup

  • 1/2 cup butter (1 stick)
  • 1 cup flour
  • 4 cups hot chicken broth (heat in microwave)
  • 1 1/2 cups heavy cream
  • 1 jar of Cheese Whiz, 16 ounces
  • 1 Tbsp Worcestershire sauce
  • 6 ounces beer
  • 1/2 tsp yellow food color (optional)
DIRECTIONS
  1. Melt butter in a soup pot.
  2. Stir in flour; cook on low for about 5 minutes, stirring frequently.
  3. Slowly add the hot chicken broth and cream to the pot, and mix until smooth.
  4. Add the Cheese Whiz - stir thoroughly.
  5. Add the Worcestershire, beer, and food coloring.
  6. Simmer 15 minutes.

Found this recipe years ago in a magazine ad - probably for Cheese Whiz. The soup is good, and it's fun to garnish each bowl by floating a little popcorn on top of the soup.
