Beetroot chutney

- Beetroot, 1 no
- Onion, ½
- Green chilli, 2 nos
- Mint leaves, cleaned, 2 tbsp
- Garlic, peeled, 2 cloves
- Curry leaves, 5-6 nos
- Salt, to taste
- Lemon juice, 1 tsp
- Cashewnuts, soaked, 1 tbsp
- Sugar, 1 tsp
DIRECTIONS
- 1. Peel the beetroot and chop roughly
- 2. Peel the onion and chop roughly
- 3. Put all the ingredients in a blender and add little water just to make a thick chutney
- 4. Blend until smooth
