Beetroot chutney
INGREDIENTS

  • Beetroot, 1 no
  • Onion, ½
  • Green chilli, 2 nos
  • Mint leaves, cleaned, 2 tbsp
  • Garlic, peeled, 2 cloves
  • Curry leaves, 5-6 nos
  • Salt, to taste
  • Lemon juice, 1 tsp
  • Cashewnuts, soaked, 1 tbsp
  • Sugar, 1 tsp
DIRECTIONS
  1. 1. Peel the beetroot and chop roughly
  2. 2. Peel the onion and chop roughly
  3. 3. Put all the ingredients in a blender and add little water just to make a thick chutney
  4. 4. Blend until smooth

This beetroot chutney can be used as a dip with fries, wafers or any dish which looks dull in colour and you want to brighten it up.
