Bescaimella Sauce
  • Cooking Time: 5-10 minutes
  • Servings: Makes about 5 cups
  • Preparation Time: 20-30 minutes
  • 4 c. milk (use almond or coconut milk for dairy free)
  • 1/2 c. butter (use Smart Balance dairy free butter for dairy free), cut up
  • 1/3 c. white rice flour
  • 1/3. cornstarch
  • pinch nutmeg
  • salt and pepper to taste
  1. Heat milk in microwave on high for 4 minutes. In a saucepan melt butter over medium low heat, when melted add flours and seasonings and stir until smooth. Add hot milk and cook, stirring until mixture becomes thickened and smooth, remove from heat. It is now ready to use.
I have made lasagna all my life, in America we make a very hearty lasagna, loaded with meat and cheeses. When I visited Italy, I frequently was served lasagna that was far more delicate and utterly delicious. My Italian host, very graciously gave me the recipe, which I have converted to gluten free. Instead of so much cheese, the Italians make their lasagna with Besciamella sauce, fresh pasta, and Bolognese sauce. So great if you are Dairy Free!
