Best Ever Veggie Kebabs
CATEGORIES
INGREDIENTS
- Ingredients for Marinade:
- 1 cup of vegetable oil
- 1/2 to 3/4 cup soy sauce
- 1/4 cup worcestershire
- 2 and 1/4 teaspoons salt
- 1 tspn of black pepper
- 1/2 to 1/4 cup red wine vinegar
- couple dashes of dried parsley
- 2 large crushed garlic cloves
- 1/3 cup of fresh lemon juice
- Veggies:
- White or Yellow Onion- one inch squares
- Two small zucchinis- sliced into at least 1/2 inch rounds
- Two yellow squash- sliced into at least 1/2 inch rounds
- One red bell pepper- one inch squares
- One yellow bell pepper- one inch squares
- Baby bella or crimini mushrooms- stems removed
- Cherry Tomatoes
- Red Potatoes -one inch squares(on skewers by themselves because they take longer)
DIRECTIONS
- Marinate the veggies in a ziplock bag or plastic container for 1-24 hours
- Place veggies on skewers alternating each of the veggies
- Grill on Medium to High Heat turning until all sides have black grill marks

- I recently went camping in Joshua Tree and used this recipe with a Steamed fish and curried couscous recipe from a camping cookbook I picked up. It was phenomenal. I'll post the fish and couscous next.
