Best Toffee Ever!
  • Cooking Time: 20 min approx
  • Preparation Time: 10 min
  • 1 cup coarsely chopped pecans, almonds or walnuts, or none!
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 cup milk chocolate chips (can use 3 Hershey milk chocolate bars)
  1. Spray a 9-inch square pan with cooking spray and line with parchment paper.
  2. Spread the chopped nuts in a single layer on top of the parchment.
  3. Add butter, sugar, and salt to a heavy bottomed 3 quart saucepan.
  4. Bring to a boil over medium low heat, stirring frequently to dissolve the sugar.
  5. Once the candy is boiling, stir occasionally, slowly and evenly, until the candy has reached 290F to 300F, or reaches the "hard crack" stage. Remove from heat.
  6. Gently stir in the vanilla extract.
  7. Pour the mixture over the chopped pecans.
  8. Let sit for five minutes, undisturbed, before sprinkling the chocolate chips over the top.
  9. Cover the pan with foil and let sit for another 5 minutes or until the chocolate has softened.
  10. Remove the foil and gently spread the softened chocolate until smooth.
  11. Cool in pan in refrigerator for at least 2 hours.
  12. Take out of fridge and remove parchment. Place on a cutting board and use a knife to cut or break the toffee into pieces.
  13. Store in an airtight container in a cool place.
