Best Yellow Cake
  • 4 large eggs, room temp
  • 1/2 cup whole milk, room temp
  • 2 tsp. vanilla
  • 2 1/4 cups sifted cake flour
  • 1 1/2 cups sugar
  • 2 tsp. baking powder
  • 3/4 tsp. salt
  • 2 sticks unsalted butter, softened and each stick cut into 8 pieces
  1. Adjust oven rack to lower middle and preheat oven to 350. Grease 2 cake pans. Grease parchment rounds and place in pan then dust w flour and tap out excess.
  2. Beat eggs, milk, and vanilla with fork in small bowl; measure out 1 cup and set aside. Combine flour, sugar, baking powder, and salt in mixing bowl and mix until blended.With mixer running at lowest speed, beat in butter one piece at a time until mixture is clumpy {the size of peas). Add reserved 1 cup of egg mixture and mix at lowest speed until incorporated then beat 1 minute at medium speed until fluffy. Add remaining egg mixture, scrape down sides of bowl, and continue mixing on high until mixture looks slightly curdled. Divide mixture evenly between 2 pans and bake 20 - 25 minutes just until done.Cool completely before frosting.
