Big Jim's Cornhole Salsa
INGREDIENTS
  • 2tbl white onion
  • 8 roma tomatoes (about 1 lb)
  • 1 serrano chile (two if you're REALLY brave)
  • 2tbl fresh cilantro
  • 1 tsp sugar
  • 1 tsp salt
  • 1tbl fresh lime juice
DIRECTIONS
  1. Put pepper(s), cilantro, sugar, salt and lime juice in food processor - pulse until finely chopped. Then add onion, pulse to break up (two or three pulses). Add tomatoes and pulse until tomatoes are size you want them to be.
  2. Serve with tortilla chips and enjoy!
