Bittersweet and Nutty Mixed Greens
INGREDIENTS

- 2 small firm apples, cubed
- butter
- 1 T sugar
- 1 thinly sliced garlic clove
- 1 chopped bunch mustard greens
- 2 sliced small leeks
- 1 sliced baby bok choy
- 1 T soy sauce
- salt
- pepper
- 1/2 cup toasted pine nuts
DIRECTIONS
- Saute apples in butter with sugar until soft; remove from pan. Saute garlic clove until golden. Add mustard greens, leeks and bok choy; cook 90 seconds until wilted. Reduce heat to low; stir in soy sauce and cook 2 - 3 minutes. Season with salt and pepper. Stir in apples and pine nuts into pan; serve immediately.
