Bittersweet and Nutty Mixed Greens

  • 2 small firm apples, cubed
  • butter
  • 1 T sugar
  • 1 thinly sliced garlic clove
  • 1 chopped bunch mustard greens
  • 2 sliced small leeks
  • 1 sliced baby bok choy
  • 1 T soy sauce
  • salt
  • pepper
  • 1/2 cup toasted pine nuts
DIRECTIONS
  1. Saute apples in butter with sugar until soft; remove from pan. Saute garlic clove until golden. Add mustard greens, leeks and bok choy; cook 90 seconds until wilted. Reduce heat to low; stir in soy sauce and cook 2 - 3 minutes. Season with salt and pepper. Stir in apples and pine nuts into pan; serve immediately.
