Black Bean & Sausage Soup

  • Bag raw Black Beans
  • 2lbs. All beef sausage KieÅ‚basa
  • 1/2 cup onions
  • 1 cup Orange Juice or a can of Rotel
  • 1 teaspoon cumin
  • 1 teaspoon pepper
  • salt to taste
  • 1/2 cup of Jasmine rice
  • 2 cups beef broth
  • 4 Garlic gloves (minced)
DIRECTIONS
  1. Soak your black beans overnight and drain and rinse in the morning.
  2. RINSE WELL
  3. Add onions, seasonings, oj, beef broth, garlic
  4. add a little water if needed
  5. bring to a boil and then let simmer for a few hours, I usually let them cook until the broth is stew like.
  6. dice sausage into 1/2'' slices and add
  7. cook yellow rice in a separate pot and add when you are ready to serve
