Black Bean Burgers
INGREDIENTS

  • 15 ounce can black beans , drained and rinsed
  • 3 mini bell peppers
  • 1 jalapeño pepper
  • 1/2 small onion
  • 2 cloves garlic, peeled
  • 1 large egg, beaten
  • 2/3 cup panko breadcrumbs
  • paprika to taste
  • cumin to taste
  • chili powder to taste
  • salt and freshly ground black pepper, to taste
  • Optional:
  • Hamburger buns/bread of choice
  • Lettuce
  • Tomato
  • Pickles
  • Mayo
  • Mustard
  • Ketchup
DIRECTIONS
  1. Place rinsed and drained black beans in a bowl. If needed, blot them with a paper towel to remove any extra moisture. Place in a large bowl and mash well with a fork
  2. Place the bell pepper, jalapeño, onion and garlic in a food processor and process until finely minced
  3. Drain any excess liquid from the minced veggies before adding to the mashed beans, because if it's too wet, the burgers won't hold together as well
  4. Combine veggies to beans and add cumin, paprika, chili powder, salt and pepper and mix well
  5. Add beaten egg and mix. Stir in bread crumbs. Form mixture into 4-6 patties
  6. lay patties on a lightly greased baking sheet and cook at 375 for 10 mins. Flip patties and cook another 10 mins
  7. Serve on a bun with toppings/condiments of your choice or as the protein on a salad
  8. Enjoy!
