Black Bean Burgers
INGREDIENTS

- 15 ounce can black beans , drained and rinsed
- 3 mini bell peppers
- 1 jalapeño pepper
- 1/2 small onion
- 2 cloves garlic, peeled
- 1 large egg, beaten
- 2/3 cup panko breadcrumbs
- paprika to taste
- cumin to taste
- chili powder to taste
- salt and freshly ground black pepper, to taste
- Optional:
- Hamburger buns/bread of choice
- Lettuce
- Tomato
- Pickles
- Mayo
- Mustard
- Ketchup
DIRECTIONS
- Place rinsed and drained black beans in a bowl. If needed, blot them with a paper towel to remove any extra moisture. Place in a large bowl and mash well with a fork
- Place the bell pepper, jalapeño, onion and garlic in a food processor and process until finely minced
- Drain any excess liquid from the minced veggies before adding to the mashed beans, because if it's too wet, the burgers won't hold together as well
- Combine veggies to beans and add cumin, paprika, chili powder, salt and pepper and mix well
- Add beaten egg and mix. Stir in bread crumbs. Form mixture into 4-6 patties
- lay patties on a lightly greased baking sheet and cook at 375 for 10 mins. Flip patties and cook another 10 mins
- Serve on a bun with toppings/condiments of your choice or as the protein on a salad
