Black Bean Salad

INGREDIENTS
  • 2 cans of black beans
  • 1 mango (diced)
  • 1 pear (diced)
  • 1/2 cup of creme of coconut
  • 1/4 cup fresh chopped cilantro
  • 1/4 cup of yellow bell pepper
  • 1/4 cup of onion
  • salt & pepper to taste
DIRECTIONS
  1. Mix all ingredients in a bowl, refrigerate and served chilled. Add more creme of coconut if you like it sweeter!
RECIPE BACKSTORY
I experimented with this a couple of summers ago. It's perfect with grilled fish or chicken. I usually serve it with grilled sea bass. Rarely any leftovers.
