Black Bean Soup

- 1 teaspoon extra virgin olive oil
- 1/2 small onion, chopped
- 1/2 cupped chopped carrots
- 1/2 cup chopped celery
- 1 clove garlic, minced
- 1/8 teaspoon pepper
- 2 cups fresh baby spinach
- 1 (14 ounce) can crushed tomatoes
- 1/3 cup chickpeas, rinsed and drained
- 1/3 cup black beans, rinsed and drained
DIRECTIONS
- Cook onions, carrots, celery, garlic, and pepper in olive oil for 5-7 minutes. Add broth, spinach, tomatoes, chickpeas, and black beans; bring to boiling. Cover, reduce heat, and simmer 10 minutes.
