Black Beans, Rice, And Pineapple
INGREDIENTS
  • 2-3 tbs oil (i use canola)
  • 6-10 cloves garlic (adjust to taste)
  • 1 cup chopped onion (red and/or yellow)
  • .5 cup chopped green pepper
  • 1 cup brown rice
  • 1 can pineapple, separated into pineapple and juice
  • 2 cups of liquid (add water to juice until you have 2 cups)
  • 1 drained 14 oz can of black beans
DIRECTIONS
  1. in a large pot, heat 2-3 tablespoons of oil (i use canola) add garlic, onion, pepper and sautee for 1-2 minutes. add rice, stirring constantly, then add liquid and black beans. simmer, for ~40 minutes, until rice is soft and liquid is absorbed.
  2. add pineapple and cook until just warm, but not soft. serve.
  3. also tasty with hot sauce (i have a mango habenero one that is perfect, but tobasco works too.) if you eat cheese, monterey jack is a good topping too.
