Black Beans

INGREDIENTS
  • 3 cans 15 oz each black beans -- drained
  • 1 large onion -- chopped
  • 2 cloves garlic -- minced
  • 1 green bell pepper -- chopped
  • 1/4 cup olive oil
  • 1 can 14 oz chopped tomatoes
  • 1 1/2 cups water
  • 1 can 8 oz tomato sauce
  • 1 tablespoon red wine vinegar
  • 1 tablespoon sugar
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
DIRECTIONS
  1. Rinse beans and drain.
  2. Saute onion, garlic and green pepper in oil.
  3. Add beans, tomatoes, water, tomato sauce, vinegar, sugar, pepper and salt and bring to a boil.
  4. Cover and reduce heat to low.
  5. Simmer 1 hour.
  6. Remove lid and simmer an additional 20 minutes, stirring occasionally.
  7. Serve over rice.
