Black Beans
INGREDIENTS
- 3 cans 15 oz each black beans -- drained
- 1 large onion -- chopped
- 2 cloves garlic -- minced
- 1 green bell pepper -- chopped
- 1/4 cup olive oil
- 1 can 14 oz chopped tomatoes
- 1 1/2 cups water
- 1 can 8 oz tomato sauce
- 1 tablespoon red wine vinegar
- 1 tablespoon sugar
- 1 teaspoon pepper
- 1/2 teaspoon salt
DIRECTIONS
- Rinse beans and drain.
- Saute onion, garlic and green pepper in oil.
- Add beans, tomatoes, water, tomato sauce, vinegar, sugar, pepper and salt and bring to a boil.
- Cover and reduce heat to low.
- Simmer 1 hour.
- Remove lid and simmer an additional 20 minutes, stirring occasionally.
- Serve over rice.
