Black Walnut Cookies

  • 1 cup butter, softened
  • 2 cups packed brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3 1/2 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 cups chopped black walnuts or walnuts, divided
DIRECTIONS
  1. In a large mixing bowl, cream the butter and brown sugar until light and fluffy.
  2. Beat in the eggs and vanilla.
  3. Combine the flour, baking soda, and salt.
  4. Gradually add to the creamed mixture.
  5. Stir in 1 1/4 cup of walnuts.
  6. Finely chop the remaining nuts
  7. Shape the dough into two 15 inch rolls.
  8. Roll in the chopped nuts.
  9. Press gently.
  10. Wrap each in plastic wrap.
  11. Refrigerate for 2 hours or until firm.
  12. Unwrap the dough.
  13. Cut into 1/4 inch slices.
  14. Place 2 inches apart on greased baking sheets.
  15. Bake at 350 F for 8-11 minutes.
  16. Remove to wire racks to cool.
