Blue Cheese Dressing
  • Servings: makes about 1 pt.
  • Preparation Time: 10-15 minutes
  • 3 T lemon juice (1 lemon)
  • 1/2 t. salt
  • 1 green onion, cut in 1/2" pieces
  • 1 egg
  • 1/2 c. olive oil
  • 1 c. sour cream
  • 1 c. crumbled blue cheese
  • milk to thin if needed
  1. In a Blender container put lemon juice, green onion, salt, and egg. Turn blender to high speed for a few seconds. Turn blender to low, and remove inner cap so you can slowly pour olive oil into blender. Remove from blender to a bowl and stir in sour cream and blue cheese crumbles. Refrigerate until serving.
Blue Cheese dressing is a favorite I enjoyed at restaurants when I was young. I still love it, this fresh version is so much better than the bottled stuff.
