Blue Cheese Meatloaf Muffins

  • 1 pound ground beef
  • 1/2 cup french onions
  • 2 Tbsp minced dried onion
  • 2 Tbsp minced dried bell peppers
  • 1/3 cup blue cheese
  • 1 egg
  • salt & pepper
  • 1/2 cup ketchup
  • 2 Tbsp steak sauce
DIRECTIONS
  1. Mix all ingredents (except ketchup and steak sauce) in a bowl and scoop with an ice cream scoop into lightly greased muffin pen.
  2. Mix ketchup and steak sauce and set aside.
  3. Bake at 350 degrees for appx 30 minutes.
  4. Remove from oven and distribute ketchup mixture over each muffin and return to oven.
  5. Bake for 10 more minutes.
  6. Note: I would line the bottom of oven with foil or place muffin pan on top of baking sheet to catch any drips.
RECIPE BACKSTORY
I need something quick and easy to fix and had blue cheese that I needed to use, so this recipe was born. My family raved about it!!
