Blueberry Muffins
INGREDIENTS

- 1 egg
- 1 cup milk
- 1/4 cup oil
- 2 cup flour
- 2 tablespoon sugar
- 2 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 3/4 cup blueberries
DIRECTIONS
- Preheat oven to 400 degrees Fahrenheit.
- Grease bottoms of 12 medium muffin cups.
- In a medium mixing bowl, beat egg; stir in milk and oil.
- In a small mixing bowl, combine flour, sugar, baking powder, and salt.
- Add dry ingredients to liquid ingredients, stir just until flour is moistened, batter should be lumpy.
- Fold blueberries into batter.
- Fill muffin cups two-thirds full.
- Bake for 20-25 minutes until golden brown.
- Remove from pan. serve warm.
