Blueberry Yum-Yum

INGREDIENTS
  • 2 cups fresh or frozen blueberries
  • 1 cup sugar
  • 1/4 cup water
  • 1/4 tsp cornstarch
  • 3 Tbsp water
  • 1 cup flour
  • 1/2 cup softened margarine
  • 1 cup finely chopped pecans
  • 1 (8 ounce) pkg cream cheese, softened
  • 1 cup sugar
DIRECTIONS
  1. 2 cups fresh or frozen blueberries
  2. Cook the blueberries, 1 cup sugar and 1/4 cup water over low heat about 20 minutes.
  3. Mix the cornstarcg and remaining water, then add to the above.
  4. Combine the flour, margarine and pecans together. Press dough into a 13" x 9" x 2" baking dish. Bake at 350 for 20 minutes. Cool.
  5. Cream the cream cheese and sugar together, beat until smooth. Fold in 1 (9 ounce) tub Cool Whip. Spread evenly over cooled crust. Pour blueberry mixture over the top.
  6. Refrigerate about one hour.
  7. Cut into squares, makes 15 servings.
