  • 1 medium egg
  • 1 English muffin
  • 1 slice of American White cheese
  • 1 slice of either Taylor pork roll or Canadian ham
  • butter
  • salt
  • pepper
  • aluminum foil
  1. take an egg out of the fridge and put it in a cup of hot water to take the chill off it
  2. Slice your English muffin, and slide it in your toaster oven. We want to toast it a bit, but NOT crunchy
  3. In a small non stick fry pan, add enough water to where it is about 1/4 inch deep. Bring the water to a slow simmer
  4. Now for the hard part. we need an "egg corral" to keep the egg from just running across the whole pan like a fried egg. What works well? the lid from a mason jar! Yes, spray the lid of a mason jar with non stick, and place it in the pan of water.
  5. Crack your egg into the mason lid, and pinch the yolk, or stab it with a fork to spread it some
  6. Cover the pan, and simmer it for 3 - 4 minutes. the egg will firm as it's poaching in the liquid.
  7. Butter your English muffin, then place your Canadian bacon on the bottom slice.
  8. Remove your egg from the pan and drain the water off. Place that on the muffin with the bacon. hit it with salt and pepper now.
  9. place your slice of cheese on the egg and cover with the other half of the muffin
  10. Here's a key part! take your sammy and wrap it in aluminum foil for about 3 minutes before you eat. The heat and moisture from the egg will melt the cheese and impart the perfect "softness" to the muffin
