Bok Choy

INGREDIENTS
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 2 tablespoons oil
  • 1 1/2 lb baby boy choy chopped stalk and greens(5 cups)
  • 1 inch piece ginger peeled and minced (1 tablespoon)
  • Optional:
  • 2 Tbsp oyster flavored sauce
  • 1 Tbsp rice vinegar
  • 2 garlic cloves
DIRECTIONS
  1. Combine soy and sugar in a small bowl, heat large skillet over high heat about 2 minutes. Add oil, swirl to coat pan. Add boy choy stalks, stirring frquuently until lightly browned. Add ginger and cook, stirring frequently, about 30 seconds,add boy choy greens, soy sauce mixture, cook until greens are wilter about 1 minute. Serve immediately
  2. Bok Choy with oyster sauce and garlic: If you prefer, hoisin sauce can be substituted for the oyster sauce.
  3. Follow recipe for the stir fried boy choy with soy sauce and ginger, substituting 2 tablespoons oyster flavored sauce and 1 tablespoon rice vinger for the soy sauce, and adding 2 garlic cloves minced along with the ginger.
