Bourbon Sweet Potatoes

INGREDIENTS
  • 6 Large sweet potatoes, peeled and cut about 1" thick
  • 2 whole cloves
  • pinch of cinnamon
  • 4 T maple syrup
  • 2 1" strips orange peel
  • water to cover
  • 1 C dark brown sugar
  • 1 T dark molasses
  • 1/2 C butter
  • 3/4 C bourbon
  • 1/2 tsp vanilla
DIRECTIONS
  1. Cook potatoes, cloves, cinnamon, syrup and peel with enough water to cover until just tender.
  2. In another pot, mix rest of ingredients - bring to boil, stir till sugar is dissolved. Remove from heat.
  3. Arrange potato slices in baking dish, (remove cloves and peel) - pour syrup mixture over slices and bake.
  4. 350' - 30-40 minutes
