Bourbon Sweet Potatoes
INGREDIENTS
- 6 Large sweet potatoes, peeled and cut about 1" thick
- 2 whole cloves
- pinch of cinnamon
- 4 T maple syrup
- 2 1" strips orange peel
- water to cover
- 1 C dark brown sugar
- 1 T dark molasses
- 1/2 C butter
- 3/4 C bourbon
- 1/2 tsp vanilla
DIRECTIONS
- Cook potatoes, cloves, cinnamon, syrup and peel with enough water to cover until just tender.
- In another pot, mix rest of ingredients - bring to boil, stir till sugar is dissolved. Remove from heat.
- Arrange potato slices in baking dish, (remove cloves and peel) - pour syrup mixture over slices and bake.
- 350' - 30-40 minutes
