Boursin Creamed Spinach

  • 1 T butter
  • 1/2 cup yellow onion, diced
  • 2 T flour
  • 1 cup 2% milk
  • 1/2 cup cream
  • 1 package Boursin cheese
  • 1 package frozen chopped spinach
  • 2 T parmesan
  • 1 tsp lemon zest
  • 3/4 cup panko breadcrumbs
  • salt, pepper and cayenne to taste
DIRECTIONS
  1. Preheat oven to 425 degrees.
  2. Saute onion in saucepan for 5 minutes. Add flour and cook for additional 1 minute.
  3. Whisk in milk and cream.
  4. Simmer 1 minute.
  5. Stir in Boursin until smooth.
  6. Remove from heat. Add spinach, parmesan, zest and spices.
  7. Transfer to baking disk.
  8. Top with Panko. Place dish on cookie sheet.
  9. Bake for 20 to 25 minutes.
