Braised Broccoli Rabe and Kale with Sauteed Leeks and Garlic
  • 1 bunch broccoli rabe (rapini), trimmed
  • 1 bunch kale, trimmed
  • 1 tbsp olive oil
  • 1 medium leek, coarsely chopped
  • 2 cloves garlic, sliced
  1. In a large pot, bring water to a boil. Add the broccoli rabe and kale and cook about 3 minutes or until soft/firm.
  2. Meanwhile, heat pan over medium-high heat. Add olive oil and coat the pan. Add sliced garlic and saute until garlic begins to brown, about 2 minutes. Add leeks and saute until soft, about 3 minutes.
  3. Drain the kale and rapini, removing excess water. Add to pan and season with salt and pepper to taste. Cook about 2 minutes. Serve immediately.
This is an incredibly tasty and healthy dish.
