Braised leeks in wine and tomatoes

- 1 tablespoon of olive oil
- 100 grams of smoked bacon in cubes
- 4 leeks, cleaned and in pieces of 5 cm long
- 2 cloves of garlic, chopped
- 1 teaspoon of dried thyme
- 2 teaspoons of tomatopaste
- 3 ripe tomatoes, skinned and cut into pieces
- 200 ml. white wine
- salt
- freshly grated pepper
DIRECTIONS
- 1 Heat the oil and fry the bacon until crunchy, add leeks, garlic and thyme and fry on a low heat for a few minutes.
- 2 Add tomatopaste and tomatoes and fry another few minutes
- 3 Add wine and bring to the boil
- 4 Turn the heat low and simmer uncovered for about 20 minutes.
- 5 Add salt and pepper to taste
- Serve with pork chops
