Braised leeks in wine and tomatoes

  • 1 tablespoon of olive oil
  • 100 grams of smoked bacon in cubes
  • 4 leeks, cleaned and in pieces of 5 cm long
  • 2 cloves of garlic, chopped
  • 1 teaspoon of dried thyme
  • 2 teaspoons of tomatopaste
  • 3 ripe tomatoes, skinned and cut into pieces
  • 200 ml. white wine
  • salt
  • freshly grated pepper
DIRECTIONS
  1. 1 Heat the oil and fry the bacon until crunchy, add leeks, garlic and thyme and fry on a low heat for a few minutes.
  2. 2 Add tomatopaste and tomatoes and fry another few minutes
  3. 3 Add wine and bring to the boil
  4. 4 Turn the heat low and simmer uncovered for about 20 minutes.
  5. 5 Add salt and pepper to taste
  6. Serve with pork chops
