Bratwurst Potato Soup

INGREDIENTS
  • 1 lb. cooked bratwurst links, cut into 1/2 inch slices
  • 2 medium potatoes, peeled and chopped
  • 2 cups water
  • 1 medium onion, chopped
  • 1/2 teaspoon salt
  • Dash of pepper
  • 4 cups shredded cabbage
  • 3 cups milk, divided
  • 2 tablespoons all-purpose flour
  • 1 cup (4 ounces) shredded Swiss cheese
DIRECTIONS
  1. In a Dutch over or large pot, combine bratwurst, potatoes,
  2. water, onion, salt and pepper. Bring to a boil. Reduce heat;
  3. cover and simmer 10 minutes. Add cabbage. Cover and simmer 10-15
  4. minutes or until vegetables are tender. Stir in 2 1/2 cups milk.
  5. Combine flour with remaining milk until smooth. Stir into soup.
  6. Bring to boil; cook and stir for 2 minutes or till thickened.
  7. Remove form heat. Stir in cheese till melted.
