Breakfast Nachos
  • 1 bag tortilla chips
  • 1 cup cooked black beans
  • 1/2 cup tomato salsa or pico de gallo
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded pepper jack cheese
  • 4 strips cooked bacon
  • 4-6 fried eggs
  • Guacamole and/or sliced avocado and sour cream or Greek yogurt, for serving
  1. Preheat the oven to 425°F.
  2. Spread the tortilla chips out on a parchment lined baking sheet or 9×13 inch baking pan. Sprinkle the black beans and salsa over the top of the tortilla chips in an even layer. Top with cheese.
  3. Transfer the baking dish into the oven and bake for 6-8 minutes, until cheese is melted.
  4. Remove the baking sheet from the oven and top nachos with bacon and fried eggs. Serve immediately!
