Brittany Puffs
  • 4 Med. boiled/baked potatoes
  • 1/4 cup sour cream
  • 1/2 cup finely chopped onion
  • 2 eggs
  • 3/4 cup grated cheddar cheese
  • 4 Tbsp. self rising flour
  • salt and pepper to taste
  1. I used my electric chopper to mix all ingredients starting with the potatoes, then adding the others one at a time. You may use more flour if needed, mix shoud be just thick enough to make a soft ball when scooped onto a spoon. Drop balls into deep fryer set at 400', let cook on one side then flip with a wooden long handeled spoon. When brown on both sides remove and drain on paper towels. Eat like hush puppies. Delicious!
I had some left over whole boiled potatoes, I hate to throw anything away so I thought about making potato pancakes. When I got ready to use them, I was getting ready to deepfry some shrimp; That's when I thought hmmm, why not deep fry the potatoes, so I experimented and came up with Brittany Puffs, (Named for my Granddaughter who was visiting). They turned out delicious and my family all made me promise to make them again.
