Broccoli Casserole

INGREDIENTS
  • 2 cups broccoli florets
  • ¼ cup water
  • 2 tsp olive oil
  • 4 cubes chicken broth
  • 1 small onion, chopped
  • 1 Tbsp flour
  • Pepper
  • 4 oz. cheddar cheese, grated
  • 1 egg, well beaten
  • Breadcrumbs for top
  • Squeeze margarine
DIRECTIONS
  1. 1 Preheat oven to 325° F.
  2. 2 Microwave broccoli in water about 2 minutes then drain.
  3. 3 In skillet, heat olive oil then add chicken broth cubes, blend well.
  4. 4 Add onions and sauté a little.
  5. 5 Add flour and pepper, and blend well.
  6. 6 Add water to make a roux, let thicken.
  7. 7 Add cheese and blend in.
  8. 8 Add broccoli and beaten egg, stir gently.
  9. 9 Pour mixture into ungreased 1½ qt. casserole.
  10. 10 Sprinkle top with breadcrumbs, then squeeze a little margarine over them; bake uncovered for 20 minutes or until crumbs brown slightly.
