Broccoli-Cheese Casserole
  • 1 (10 3/4 ounce) can undiluted condensed cream of mushroom soup
  • 1 cup mayonnaise
  • 2 eggs, beaten
  • 2 boxes frozen chopped broccoli (UNTHAWED broken up)
  • 16 ounces shredded sharp cheddar cheese
  • Salt and pepper to taste
  • Ritz crackers (1 sleeve)
  1. Preheat oven to 350 degrees. Grease a 9x13 inch baking dish. Whisk together soup, mayo, eggs, salt and pepper and cheese then mix with crumbled frozen broccoli. Spread and pat mixture into the baking dish. Bake for 50 minutes, take out of oven and add crushed Ritz crackers on top. Bake 10 more minutes. Let stand 10 minutes before serving.
