Broccoli Cheese Cornbread

  • 1 Jiffy cornmuffin mix
  • 1 10 oz. pkg. frozen chopped broccoli, thawed
  • 1 small onion, diced
  • 4 eggs, slightly beaten
  • 3/4 cup small curd cottage cheese
  • 1/2 cup shredded mild cheddar cheese
  • 1/2 teaspoon salt
DIRECTIONS
  1. Mix broccoli, onion, eggs, cottage cheese, cheddar cheese and salt.
  2. Add corn muffin mix and mix well.
  3. Spray a 11 x 8" dish with cooking spray and bake for 35 minutes at 375 degrees F.
RECIPE BACKSTORY
My Mother gave me this recipe. I don't know where she got it. I've seen other versions, but only she seemed to add the cheddar cheese and onion. It works well as a type of bread, or as a side dish. You get your vegetables, eggs, bread and cheese all in one.
