Broccoli Meat Roll
INGREDIENTS

- 2 eggs
- 1/4 c. milk
- 1/4 c. ketchup
- 3/4 c. soft bread crumbs
- 1 1/2 t. salt, divided
- 1/4 t. pepper
- 1/4 t. dried oregano
- 2 lbs. lean ground beef
- 1 pkg. (10 oz.) frozen chopped broccoli, thawed & drained
- 1 pkg. (2 1/2 oz.) thinly sliced deli ham
- 3 slices mozzarella cheese, cut in half diagonally
DIRECTIONS
- lg. bowl, mix eggs, milk, ketchup bread crumbs, 1/2 t. salt, pepper, oregano and beef. Pat beef on a piece of heavy duty aluminum foil to 12"x10" rectangle. Cover with broccoli to within
- 1/2" of edges. Sprinkle with remaining salt. Top with ham. Roll up, jell roll style, starting with a short side and peeling foil away
- while rolling. Seal seam and ends. Place in a greased 13'x9'x2" baking dish.
- Bake, uncovered at 350° for 1 1/4 hours; drain.
- Top with cheese slices. Bake 1 min. longer or until cheese is melted.
