Broccoli Puff
  • 1 (10 oz.) pkg. frozen chopped broccoli
  • 1 can Cream of Mushroom soup
  • 1/2 c. grated Cheddar cheese
  • 1/4 c. milk
  • 1/2 c. mayonnaise (if you can access Dukes mayonnaise- use it! Any other brand will work ok, but not as yummy...but for the love of all that is good and true, DO NOT USE Hellmann's or any other "dressing" type mayo)
  • 1 egg, beaten
  • 1 tbsp. butter, melted
  • 1/4 c. bread crumbs
  1. Cook broccoli according to package directions, omitting the salt, drain thoroughly. Place broccoli in baking dish. Combine soup and cheese. Add milk, mayonnaise and egg gradually, stirring until well blended. Pour over broccoli. Combine melted butter and bread crumbs. Sprinkle evenly over soup mixture. Bake in preheated 350 degree oven for 45 minutes or until bubbly and crumbs are slightly browned.
My mom made this every holiday of my life. It is my ABSOLUTE favorite of hers.
