Broccoli and Potato Soup

INGREDIENTS
  • 4 cups water
  • 2 vegetable bouillon cubes
  • 2 large potatoes peeled and diced
  • 3 carrots diced
  • 2 cups broccoli chopped
  • 1 cup celery diced
  • 1 onion chopped
  • 3 garlic cloves minced
  • dash of olive oil
  • 2 cups plain almond milk
  • 4 TBSP almond butter
  • salt and pepper to taste
DIRECTIONS
  1. In pot add water, bouillons, potatoes, carrots, broccoli, celery and bring to boil then simmer for 20 minutes.
  2. In pan saute onion and garlic with oil and add to pot.
  3. Add and mix almond milk, almond butter, salt, pepper and cook for another 10 minutes.
  4. Blend soup.
