Broiled Salmon with Mustard-Soy Crust

  • 1.5-2 pounds salmon filet(family prefers the tail part)
  • 1/4 c grainy Dijon mustard (I use less)
  • 1 T soy sauce (I use low sodium)
DIRECTIONS
  1. Preheat broiler and move the shelf so that the heat source in about 4 inches away.
  2. Place the salmon skin down in a shallow baking pan or cookie try lined with foil and lightly greased with pam.(or veg oil or olvie oil)
  3. Brush the top of the fish with the mustard.
  4. Sprinkle soy sauce on top.(see note)
  5. Broil the fish for 10 min or until the Dijon-soy crust is browned and the salmon flakes easily and is cooked throughout(not overcooked)
  6. DON'T flip fish during cooking.
RECIPE BACKSTORY
I got this one out of the newspaper a while back. I do it a little different than what they say to do to suite my nanny family's taste. Note: the 1/4 c mustard was just too much the first time I did this. I took several Tablespoons of mustard and mixed it with the soy sauce then brushed it on the fish the next time. I found it burned less and tasted better. Calories are around 220 per serving
